Recipe Mango Coconut Cucumber Salad

Now that Spring has arrived, make a refreshing food choice and sample this unique, mouth-watering salad, which is a delicious concoction of sweet, fruity, and spicy sensations. This nutritious side dish is quick and simple to prepare and will acquaint your taste buds with fresh, exotic flavors. The main allure with this dish is the mango, which is appreciated not only for its gratifying sweetness and juicy quality, but also for its health benefits. The mango contains many necessary enzymes, which serve as a soothing digestive aid and help to boost metabolism by purifying the intestinal tract. It also has high iron, potassium, and magnesium content, which can help to heal anemia, muscle cramps, stress, and heart problems. Do your body a favor this Spring and try some fresh, healthy food!

Ingredients:

1 cucumber, peeled, seeded, diced
1 mango
1-2 Tbs. lime juice
1/2 tsp. chili peppers, minced
1 small red pepper, minced
2 Tbs. dried shredded coconut
2 tsp. brown sugar

Directions:

1. Mix everything in a bowl.
2. Chill for 15-20 minutes before serving.

Makes 6 servings. Works very well with Brazilian, Thai or Indian dishes!

Health News Carcinogens in the Diet

It's official. The federal government now has added agents commonly found in overcooked meat to the list of potential cancer causers. The National Toxicology Program (NTP), part of the National Institutes of Health, published its latest update of materials known to cause cancer. Among the agents on the list are the heterocyclic amines that develop in meats when they're cooked too long at high temperature.

The report notes that studies"provide some indication" of human risks from eating broiled or fried foods "that may contain IQ and/or other heterocyclic amines." The National Cancer Institute conducted one of those suggestive studies. It compared the diets of 176 stomach cancer patients and another 503 cancer-free individuals. Overall, people who regularly ate beef medium-well or well-done faced more than three times the risk of stomach cancer.

Inspiration The Power of One

Florida Gulf Coast University (FGCU) is home to an emerging organization called The Power of One Animal Rights Group. In Fall of 2003, Katie Hammer, president and founder of the organization, made her dreams a reality by gathering like-minded individuals to take steps toward relieving animal suffering. The significance of the group’s name is to give a sense of unity to members of the club and to show that each individual can make a difference for the animals.

In addition to hosting a Meatout Walk, the group recently hosted a Vegan Food Tasting event at FGCU. After the group gathered over 1,000 signatures (over 1/6 of the student population) urging the cafeteria to provide vegan entrees for student meals, the University promised that the most-preferred dishes at the event would be provided on a permanent basis. The group has received overwhelming support for this initiative, with nearly 80% of students surveyed confirming that they would buy plant-based options if included on the menu. This truly exemplifies the power of one animal rights group!
