Homemade Veggie Burgers

It’s time to use your grill and enjoy outdoor cooking. Try something different by making your own burgers! These delicious homemade veggie burgers are made with protein-packed lentils, wholesome rolled oats, and antioxidant-rich carrots. Seasoned to perfection, these burgers taste great and are actually good for you… unlike standard burgers, they’re low in fat and high in fiber.

Ingredients:

1 cup dry lentils, rinsed
2 1/2 cups water
1/2 tsp. salt
1 Tbs. olive oil
1/2 medium onion, diced
1 medium carrot, diced
1/2 tsp. pepper
1 tsp. soy sauce (optional)
3/4 cup rolled oats, finely ground
3/4 cup bread crumbs

Directions:

  1. Place lentils, water, and salt in saucepan and bring to a boil; lower heat, cover, and simmer for about 45 minutes, until water is nearly gone and lentils are very soft, with splitting skins.
  2. Sauté the onion and carrot in oil until soft, about 5 minutes.
  3. Mix lentils, onions, carrots, pepper, and optional soy sauce in a large bowl; add the ground oats and bread crumbs and mix more.
  4. While still warm, form the lentil mixture into patties.
  5. In a 400º oven, bake the burgers on a greased baking sheet until light brown (about 15 minutes) or put your grill to work!

Carrots Protect Against Cancer

It’s no wonder that carrots are one of the most popular vegetables – they’re a great snack and also happen to be a nutrient-rich food that can improve overall health and well-being. People who eat carrots regularly have been found to have a reduced cancer risk by one-third, according to a study published in the Journal of Agricultural and Food Chemistry. The benefits of carrots have been credited to a natural phytonutrient called falcarinol, which serves to help protect carrots from fungal infections and provide defense against harmful pests. Lead study researcher, Dr. Kirsten Brandt, recommends that everyone eat at least one small carrot every day, together with other vegetables and fruits, to benefit from their health-giving properties.

In addition to warding off cancer, carrots can help keep eyesight strong. That’s because they’re packed with beta carotene. Beta Carotene gives the carrot its name and orange color. The body converts it to vitamin A, which is the vitamin most essential for 20-20 vision.

Oprah Goes Vegan

Oprah Winfrey has decided to undergo a spiritual and physical makeover… she’s going vegan for 21 days! Inspired by Kathy Freston, spiritual counselor and author of best-seller book, Quantum Wellness, Oprah is currently following a cleansing diet. The plan is to eliminate caffeine, sugar, alcohol, gluten and all animal products from her diet for a full 21 days. Oprah states, “How can you say you’re trying to spiritually evolve, without even a thought about what happens to the animals whose lives are sacrificed in the name of gluttony?”
