16 oz frozen peas, thawed
1/4 cup red onion, finely diced
1/2 cup celery, finely diced
1/2 cup carrots, finely diced
1/4 cup veggie "bacon" bits
Dressing:
1 Tbs. whole grain mustard

Research reveals that chlorophyll, a natural pigment found in dark green plants, helps fight cancer growth and acts as an antioxidant in the body. Chlorophyll is important for photosynthesis to take place in plants. It protects against various chemical carcinogens, which are involved in the promotion of cancer.
A study examined a population in eastern China where fungal contamination of grains and nuts is very common, resulting in a high rate of liver damage and cancer in the people who eat them. After supplementing with chlorophyllin –- the synthetic counter part of chlorophyll –- the incidence of liver cancer among that population decreased significantly.

Eric Prescott is a man of many talents… and he puts them to use for the greater good! An actor, director, producer, writer, and speaker, Eric is also a dedicated animal rights activist. In April of 2002, he went from omnivorous eater to vegan between lunch and dinner. After spending a couple hours doing internet research to learn about how animals are raised for food, he couldn't stand the thought of contributing to such cruelty any longer.
Having experienced the value of the internet firsthand, he decided to share more information in an animal-friendly context and to leverage current events into action by launching An Animal-Friendly Life in 2005. Eric recently moved to Boston with his wife and founded The Boston Vegan Association. The new group has been conducting food outreach and other activism in the city and has been growing at an impressive rate!
