3 cups water or vegetable stock
1/2 cup lentils, rinsed
1/2 cup brown rice
2 tsp. dried basil
1 ½ tsp. dried oregano
1/2 tsp. dried thyme
1/4 cup onion, finely diced
1/2 cup green & red peppers, finely diced
2 Tbs. green onion, minced
2 Tbs. fresh parsley, chopped
1 Tbs. soy sauce
1 tsp. garlic powder
1/2 tsp. salt
1/8 tsp. black pepper
2-3 cups marinara sauce
6 submarine rolls (6") or hot dog buns
Place water or vegetable stock in a medium saucepan and bring to a boil.
Add lentils, brown rice, and dried herbs.
Cover saucepan, reduce heat to low, and simmer until lentils are tender (about 35 minutes).
