Recent research reveals that pistachio nuts can help lower cardiovascular disease risk. The number of people suffering from cardiovascular diseases is increasing at an alarming rate. Sedentary and tense lifestyles, along with faulty eating habits, increase the risk of cardiovascular diseases. The study, conducted by researchers at Pennsylvania State University, concluded that only handful of pistachios nuts can help in lowering cardiovascular diseases risk.
Researchers analyzed data collected from participants who had LDL cholesterol levels above optimal range. The participants were first given a diet rich in cheese, oil and butter and subsequently swiched to a low-fat diet without pistachios for one month. For the second month they were given a similar diet that included one daily serving of pistachio nuts. Participants were then given a similar diet with two daily servings of pistachios in the third month. Analysis of data showed that two daily servings of pistachios led to 12% decrease in the bad cholesterol levels and 8% decrease in the total cholesterol of the participants. The researchers believe that these nuts contain an antioxidant, called lutein, which slashes the growth of bad cholesterol in the arteries. Moreover pistachios trim down levels of low-density lipoprotein, or LDL, the "bad" cholesterol in the blood.

Julie Eyrich encourages others to try a vegan diet – not just because of health and animal protection reasons, but for the environment. She says, “You reduce greenhouse gases by 1.5 tons per year by going vegan.... It's the most eco-friendly diet." Julie is the board member of the Vegetarian Information Group of Rochester (VIGOR) in New York. The group is dedicated to promoting earth-friendly and compassionate living through plant-based food choices.
Founded in 2001 by current president Kati Berg, VIGOR holds a monthly potluck dinner at rotating locations around Rochester. These restaurant nights include trips to Twin Cities restaurants and an annual Thanksgiving dinner. Every year, VIGOR sets up a food booth at Rochester’s biggest festival of the year, selling 100% vegan food. Sales increased more than 40% since last year, with veggie items like Cajun tofu wraps, portobello burgers, Indian pakora fries and root beer floats. The group also distributes "Vegetarian Starter Kits" around Rochester. More activities are in the works.
