Kiwi Clementine Dressing

Kiwi fruit and clementine oranges combine just the right balance of natural sugar and tangy tartness to create this deliciously creamy dressing. Drizzle over hearts of romaine, red oak, green leaf, or a mesclun mixture. Kiwi and clementines are loaded with vitamins, minerals, and fiber. This recipe will add excitement and nutrition to any salad.

Ingredients:

1 Tbs. olive oil
1/2 onion, chopped
2 cloves garlic, finely chopped
2 kiwis, peeled & halved
1/2 cup extra virgin olive oil
2 clementine oranges, halved & juiced
1/4 cup balsamic vinegar
2-3 Tbs. maple syrup
1 Tbs. dijon mustard
salt (to taste)

Directions:

  1. Heat oil in a small pan and sauté onion and garlic for 3 minutes until tender and browned.
  2. Transfer to food processor or blender; add kiwi pulp and purée until smooth.
  3. With the processor running, gradually add the olive oil and blend until smooth and creamy.
  4. Add clementine juice, balsamic vinegar, maple syrup, mustard, and salt; pulse to combine.
  5. Taste and adjust seasoning before serving; Makes about 1 ¾ cups.

Kiwi is the Fruit for You

Kiwi can protect you from winter colds and flu. Small, green, and fuzzy, kiwi is a nutritionally dense fruit that strengthens the immune system and protects the body. Research recently published in the Cambridge journal Proceedings of the Nutrition Society showed that in addition to boosting the body’s natural defenses, kiwi also improves digestive health and muscle performance. Specifically, kiwi protects against lower digestive-tract cancers and aids muscle repair by reducing cell damage and inflammation.
