Heather Mills is a proud vegan who loves to cook! Her Tex-Mex Chili is everything you’d desire in a hearty winter meal. The veggies provide vitamins and minerals, while the beans provide protein and fiber. Cumin aides digestion, and garlic is good for almost everything! Serve this chili over rice, complement it with cornbread, or enjoy it with tortilla chips and a dollop of Tofutti Sour Supreme.
28 oz. can diced tomatoes
8 oz. cooked red kidney beans (or 15 oz. can)
1 vidalia onion, diced
1 bell pepper, diced
5 garlic cloves, minced
1 chipotle pepper, seeds removed and minced
3 Tbs. cumin
2 Tbs. chili powder
2 Tbs. black pepper
salt to taste (only at the end, right before
you serve)
10 oz veggie crumbles (see product

Quick Tip! Heather says, “I never serve chili the same day it is made; it is always better the next day, so make it a day or two in advance and don't let anyone eat it the day it's made. You’ll thank me later.”

The
largest study ever of multivitamin use in older women
found that pills did nothing to prevent cancer or
heart disease. Researchers at Fred Hutchinson Cancer
Research Center in Seattle offered this advice: "Get
nutrients from food. Whole foods are better than
dietary supplements."
The eight-year study, published in this month’s Archives of Internal Medicine, involved 161,808 postmenopausal women. Roughly equal numbers of vitamin users and nonusers developed cancers, heart attacks and cardiovascular problems. Overall, there were 9,619 cases of cancer and 8,751 cardiovascular ailments. In addition, 9,865 women died at similar rates in multivitamin users and nonusers.
Despite results, co-authors agree the research doesn't mean multivitamins are useless; they may still benefit people with poor eating habits. Groups such as the American Cancer Society recommend eating at least 5-9 servings of fruits and vegetables daily. Such habits are also reduce heart disease risks.

Heather
Mills is passionate
about publicizing a healthy, compassionate
vegan diet for the sake of animals and people.
Last year, she accepted the Celebrity Animal
Activist Award at the Animal
Rights 2008 National Conference. She is also
on the Board of Directors of the New York Coalition
for Healthy School Food and Honorary Chairwoman
of the Hunts Point Alliance for Children (HPAC).
Hunts Point is the food distribution center
of the Northeast, located in an area that has
New York City’s
worst rates of obesity, diabetes and asthma.
Heather saw an opportunity to make a difference in the community and to share her knowledge of the wonders of a plant-based food diet. She generously donated more than $1 million in vegan food and recently hosted a cook-a-thon for families of the Bronx. Her vegan meals will be served at the “No Beef Teen Cafes” to be run by HPAC and other community organizations.
Heather believes that good education and ongoing support are keys to lasting change and inspirational results. She says, “As a mother I see firsthand the benefits of healthy eating and I’m thrilled the families of Hunts Point are embracing these delicious vegan foods that I’ve loved for so many years."
