Spinach Stuffed Acorn Squash

Here’s a festive dish that’s sure to make an impression. Acorn squash is oven poached then stuffed with savory spinach and pecans. It makes a beautiful centerpiece or savory side for a Gentle Thanksgiving meal. This simple dish provides vibrant color and great taste in addition to good nutrition and healthy fiber.

Ingredients:

3 small acorn squash
1 cup celery, chopped
3 green onions, chopped
1 lb. fresh spinach, chopped
6 Tbs. dry breadcrumbs
2 Tbs. pecans, chopped
salt & pepper (to taste)

Directions:

  1. Cut squash in half and discard seeds.
  2. Place squash, cut side down, in 15"x10"x1" baking pan; fill with hot water to a depth of ½".
  3. Bake, uncovered, at 350° F for 40 minutes.
  4. Meanwhile, in a skillet, saute celery and onions in water until tender; add spinach and season with salt and pepper to taste; cook and stir until spinach is wilted.
  5. In a bowl, combine bread crumbs and pecans.
  6. Drain water from baking pan; turn squash cut side up.
  7. Stuff with spinach mixture; sprinkle crumb mixture over top.
  8. Bake 15 minutes longer or until squash is tender.

Meat & Diabetes Risk

A new review published in the journal Diabetologia adds more evidence linking meat consumption to diabetes risk. The meta-analysis examined data from 12 cohort studies. Findings reveal that people who ate the most meat had the highest risk of type 2 diabetes. High intakes of all types of meat were associated with a 17 percent increase in the risk of type-2 diabetes. Consumption of red meat and processed meat was associated with 21 and 41 percent increased risk, respectively.
