This walnut taco filling is delicious! So quick and easy, it only takes 5 minutes to prepare. You can build on this by adding corn tortillas, cooked navy beans, spinach, and salsa, or if you wanted to keep them raw, you would use lettuce leaves rather than corn tortillas and leave out the beans.
1½ cup raw walnuts, shelled
1½ tsp ground cumin
¾ tsp ground coriander
2 tsp. soy sauce

A diet rich in walnuts and walnut oil prepares the body to deal better with stress, according to a new study published in the current issue of the Journal of the American College of Nutrition. Penn State researchers studied 22 healthy adults with elevated LDL, or "bad," cholesterol. Results showed that average diastolic blood pressure was significantly reduced for the participants consuming walnuts and walnut oil.
Walnuts are a rich source of fiber, antioxidants, and unsaturated fatty acids, particularly alpha linolenic acid, an omega-3 fatty acid, and these compounds could be responsible for the beneficial effects on blood pressure. "These results are in agreement with several recent studies showing that walnuts can reduce cholesterol and blood pressure," noted on of the researchers. "This work suggests that blood pressure is also reduced [by walnuts] when a person is exposed to stress in their daily life."
