Citrus Tofu & Pineapple

Did you treat your dad to a deliciously healthy Father's Day meal yesterday? Well here's a tasty summer meal idea from Vegan Dad to further treat dad or others. “If you have not had grilled pineapple you must try it” says Vegan Dad. “Grilling really brings out the pineapple's sweetness." For best results, use firm or extra firm tofu, not silken (which is better for dessert and smoothie recipes).

Ingredients:

1 package firm or extra firm tofu (non-silken)
½ can frozen orange juice concentrate, thawed
juice from ½ lemon
juice from 1 lime
1 Tbs. balsamic vinegar
1 Tbs. oil
salt & pepper
1 fresh pineapple, peeled & sliced into rings

Directions:

  1. Press the tofu to remove moisture: Layer a cutting board or bowl with two layers of towels and place tofu on towels; lay a fresh towel on top of tofu; gently press down on towel to remove any initial water; remove damp towel and place two layers of fresh towels on top; carefully place a bowl or other weight on top of towels to press down on tofu; let sit for at least 15 minutes.
  2. Cut pressed tofu into 8 pieces.
  3. Mix juices, vinegar, oil, and salt & pepper; marinate tofu slices for an hour or so.
  4. Grill on a lightly oiled BBQ over medium-high heat, basting with marinade, for 10-15 mins.
  5. Brush fresh pineapple slices with some of the marinade and grill for about 10 mins; make sure pineapple browns but does not burn.

Dad's Influence on Diet

Lenient fathers are more likely than mothers to influence childhood obesity because they allow their kids to eat at fast-food restaurants frequently, according to a new study published in the Journal of Nutrition Education and Behavior.

Researchers at Texas A&M University conducted a 15-month study to examine parents' use of time and how that impacted meal choices and the choice between fast-food and full-service restaurants. Researchers also asked children to keep a record of what they ate and whether it was at home or out.

"To our surprise, it was father's time spent at fast-food restaurants—not mother's time spent there—that was associated with kids' time spent in a fast-food place." McIntosh said, noting fathers also need to know more about nutritional content of fast food in order to raise healthy, well-adjusted children.
