Surya’s Fire Roasted Gazpacho

Here's a zesty recipe from Vegan Fusion World Cuisine Cookbook by vegan chef Mark Reinfeld. It's a perfect way to enjoy spring with fresh, vibrant ingredients. Chef Reinfeld specializes in raw food and gluten-free vegan diets and offers a variety of resources such as vegan cooking classes, workshops, retreats, and more. His recipes are always crowd-pleasers!


4 cups fresh tomato juice
4 large roma tomatoes, grilled (1½ cups chopped)
2/3 cup filtered water or vegetable stock
2/3 cup cucumber, peeled, seeded & diced
2/3 cup corn, fresh or frozen
1/2 cup green bell pepper, diced
1/3 cup red onion, diced
3 Tbs. lime juice, fresh squeezed
3 Tbs. cilantro, minced
1 Tbs. soy sauce (or to taste)
1 Tbs. basil, minced
1 ¼ tsp. cumin powder, toasted
1 tsp. garlic, minced
1 tsp. jalapeño pepper, seeded & minced
1/2 tsp. chili powder
1/2 tsp. hot sauce (optional)
pinch of cayenne pepper
sea salt (to taste)
ground black pepper (to taste)


  1. Place tomatoes and juice in blender and blend until smooth.
  2. Place in a large mixing bowl with remaining ingredients and mix well.
  3. Serve chilled, the colder the better.

Leafy Greens & Cancer Survival

Women who eat leafy greens have improved survival rates after breast cancer, according to researchers. The findings came from data on approximately 4,800 Chinese breast cancer survivors age 20-75 who were diagnosed with stage one to stage four breast cancer from 2002 to 2006 and who were part of the Shanghai Breast Cancer Survival study.

Women who ate more cruciferous vegetables over the 36 months following their diagnosis saw their risk of dying from any cause decrease by 27 percent to 62 percent compared to women who reporting eating little or none of these veggies.
