Easy Corn Dog Muffins

Here's a fantastically simple idea from Melissa at Melissa was kind enough to invite Meatout Mondays back any time to share her recipes with you. You'll be glad we did! This recipe is a healthy, compassionate spin on a comfort food classic. It will have you in and out of the kitchen in no time -- giving you more time to snarf down these little wonders.


1 cup flour
1 cup ground cornmeal
3/4 tsp. salt
4 tsp. baking powder
2 Tbsp. ground flax seed
6 Tbsp. water
1 Tbsp. vegetable oil
1/4 cup agave
1 cup almond milk (or other dairy-free milk)
1 cup sweet corn kernels (fresh or frozen)
2 vegan hot dogs (like Field Roast)


1. Add water to a small sauce pan and bring to a boil. Add ground flax seed and stir. Cook for a few minutes until the mixture thickens.
2. Mix flour, cornmeal, salt and baking powder in a large bowl.
3. Add almond milk, agave, corn kernels, vegetable oil and flax seed mixture. Stir together until combined.
4. Cut each pre-cooked vegan hot dog into 6 small pieces.
5. Fill muffin tins with a scoop of the corn bread batter, and then press a hot dog circle into the center of each.
6. Bake at 425°F for 16-18 minutes.

Get Ready for Earth Day!

Making vegan choices is one of the most powerful things we can do as individuals to help save the planet. Help spread the vegan message at hundreds of Earth Day events around the U.S. on or around Monday, April 22, by leafleting, hosting an information table, or getting involved online. FARM will provide handouts when you register online.

You can also easily participate by taking part in the Earth Day Network’s Faces of Climate Change. Let people know the power of their food choices. Print this sign (or make your own), then upload your picture holding the sign. Share your picture on your Twitter feed using the hash tag #faceofclimate.

Get the word out creatively -- like pairing your Earth Day outreach with a fun Worldwide Vegan Bake Sale. And be sure to share the "Green Your Diet" video on Facebook and Twitter!
