Meatout Mondays Recipe of the Week:
7-Layer Party Dip

This fun dip makes a great Superbowl snack or anytime appetizer. It calls for a homemade cashew sour cream that’s easy to make and super tasty. Everything else is just thrown together and sure to please all of your party guests! Serve it up with your favorite tortilla chips.

Ingredients:

1 can (16 oz) vegetarian refried beans
1 can (4.25 oz) chopped olives
8 oz (½ jar) salsa
2 tubs (8 oz.) Wayfare Spread (optiontal -- see product)
1 bunch scallions, chopped

Easy Guacoamole:
2 avocados, peeled & pitted
ldash of lime juice
garlic powder (to taste)
salt (to taste)

Cashew Sour Cream:

1½ cup raw cashews (not roasted or salted)
water, to cover
1/3 cup fresh water
1/4 tsp. salt
2 tsp. apple cider vinegar
juice from 1 lemon

Directions:

  1. Make Cashew Sour Cream by covering cashews with water in a small bowl; let sit for a few hours (preferably overnight); pour off water and place cashews in blender with fresh water, salt, apple cider vinegar and lemon juice; puree until very smooth and creamy.
  2. Make the Easy Guacamole by mashing together avocados, lime juice, garlic powder, and salt.
  3. Layer Cashew Sour Cream, Easy Guacamole, and all other ingredients in an 8-cup baking dish in the order listed above or any order you like.
